The Beetroot and Feta Risotto

Beetroot risotto? I was also a bit dubious at first, but it’s actually delicious and it’s actually a nice change from the typical mushroom recipe! My six-year-old niece absolutely loved it, who doesn’t like to eat pink food really?

Also, on top of being very cute, beetroot has many health benefits:

The Red Goddess

IMG_5420This red juice is a perfect pre-workout drink!

Beetroot is a super food that helps to build stamina and regulate blood pressure, detoxifies the liver, boosts energy levels and helps prevent inflammation.

On top of that, pineapple is good for the heart, it also has inflammatory properties, it combats joint pain, and strengthens the bones.

All in all ideal for athletes, but you don’t need to be one to enjoy it! (See more of the health benefits below.)

The beetroot falafels

It’s kind of grey and dark here in Brussels at the moment, so I’ve decided to put some colours in my cooking. Beetroot is definitely the best ingredient to do so – remember the beetroot hummus and its amazing colour? Some would argue that beetroot tastes like earth, but I have to disagree; I think that it’s sweet and delicious – if well prepared.

Here comes the beetroot falafel recipe I tried last night: easy, cheap and healthy!


  • Beetroots, 2 medium
  • Chickpeas, cooked, 250 g
  • Coriander, fresh leaves, a handful
  • Garlic cloves, 2 large
  • Sea salt
  • Cumin, ground, 1 tablespoon
  • Red pepper, 1 teaspoon


Preheat the over at 180°C.

Peel the beetroots and cut them in cubes. Bake them for about 45 minutes until soft. I guess you could also steam them. When ready, set aside to cool down.

Put the rest of the ingredients in a food processor and blend. The mixture doesn’t have to be all mashed.

Roll into balls  – golf ball size. Place them on a baking sheet, and then press them into patty shapes (they’ll cook faster).

Bake them for approximately 7 minutes on each side, the closest to the grill.

Serve immediately. We had them with some rocket salad and feta cheese. Yum-my!
