Some would argue that healthy meals are time-consuming and hard work, but I beg to differ. All you need is a bunch of colourful vegetables, some seeds, grains, and herbs; and just a little bit of prep’. Healthy doesn’t mean fancy, it can be very simple and affordable.
It took me about 15 minutes to prepare this lunch plate, and it’s so beautiful (and delicious) that I wanted to share it with you.
On this plate we have:
- Chopped red cabbage
- Sliced mushrooms
- Sliced radish
- Steamed asparagus
- Steamed pattypan squash
- Mix of seeds
- Chopped basil
The pasta is actually edamame and mung bean fettuccini that I bought in an organic store, it’s basically beans in the shape of pasta! You can even find this kind of pasta in supermarkets now.
So today’s message is : have a healthy and happy diet, be creative, taste new things, combine tastes, textures and colours. Most importantly, have fun in your kitchen!
