The vegan pear and chia delight

It’s the pear season! As I try to buy seasonal and local products as much as possible, I eat lots of them in autumn and winter. My only issue is that the organic ones get all soft very quickly – and I must admit that I’m not a big fan of fruit when they get all mushy-mushy. I also hate throwing food away so I often end up making compotes.

This pear & cinnamon compote mixed with a chia yogurt full of fibre and antioxidant is great for breakfast or for desert! (Read more about the powerful Chia Seeds here).

The pear compote – Ingredients 

  • Pears, as many as you want (the softer, the better)
  • Apples, one apple for every 3 pears
  • Cinnamon, as much as you want (See the health benefits below)
  • Agave syrup or honey (very optional)

Procedure

Chop the pears and apples in small dices, chuck them in a saucepan with a little bit of water, and add the cinnamon. Cook over medium heat until the water is absorbed and the fruit begin to fall apart.

Allow to cool down.

The yogurt and chia topping – Ingredients (for 125 grammes of yogurt)

  • Almond yogurt (or any other plant-based yogurt), 125 gr
  • Chia seeds, two tablespoons
  • Maple syrup or honey, (very optional)

Procedure

Stir everything together, cover, and set aside for an hour so the seeds soak up some of the moisture.

Once both preparations are done, assemble them (see the picture).

Pears boost the immune system, help prevent stomach cancer, decrease the risk of diabetes and heart disease, improve heart health, promote eye health, and reduce blood pressure.

It’s a good source of copper, iron, potassium, manganese and magnesium and vitamin B. It’s high in fiber and also provides a fair amount of antioxidants.
