Living on my own, it takes me about a week to get through of a whole cauliflower! The good thing with vegetables is that you can cook them in a zillion different ways. Making patties is also a good trick to mix cereal, legumes and vegetables; once you get the idea on how to make them, you can really be creative.
Ingredients (for about 6 patties)
- Cauliflower, 1 (I used a whole one – which was quite a lot!)
- Garlic cloves, 2
- Onion, 1 small
- Coriander, dried, 2 teaspoons
- Parsley, dried, 2 teaspoons*
- Quinoa, cooked, 300 grams
- Quinoa flour (or rice flour), 2 tablespoon
- Salt, pepper
- Paprika or chili powder (optional)
* You can use any spice you fancy! Oregano and basil also go well with cauliflower.
Preheat the oven at 180°C.
Cook the quinoa and set it aside when it’s done.
At the same time, cook the cauliflower – I steamed it, but you could also boil it. When it’s soft, put it in the food processor with the garlic, and blend until it’s mashed.
Once the quinoa is done, set it aside. When the cauliflower is done, put it in the food processor, along with the garlic, and pulse for around 10 seconds until mashed.
Place the mixture in a large bowl and add the quinoa. Add the flour, parsley, oregano, and red pepper. Stir well. Put the bowl in the refrigerator for about 15 minutes so the mixture cools down and hardens.
Shape the mixture into patties. If the mixture is too soft you can add some flour – one tablespoon at a time -, it’ll help to soak up some of the moisture.
Heat some olive oil in a pan. Cook the patties until they are slightly golden brown on all sides. Turn them very gently though.
Finally, place the patties on a baking sheet or an oven tray, and bake until the patties are firm – it took about 20 minutes for me, I guess it all depends on the size you shape them into.
