On Sunday mornings, the Crossfit workout is generally insane; it takes all the energy out of you.
After that, I need my protein. Someone I used to live with made the most amazing omelette, inspired by Jamie Oliver – but not quite the same (Jamie’s uses butter, we use olive oil). And since I can’t have a meal without veggies, I make a super-food salad.
- Arugula / rocket, a handful
- Alfafa sprouts, a handfull
- Cucumber, a few slices
- Pumpkin seeds, 1 tbsp
- Halloumi cheese, 2 or 3 slices
- (basically anything else I have in the fridge that day)
We always have it with the mushrooms that we cook beforehand with turmeric and black pepper, to give it a nice kick. Put them aside and add them afterwards once the omelette is cooked.
